Yakiniku Hige

The only yakiniku restaurant among the designated Kumano beef restaurants

Shingu, Wakayama, is home to Kumano Hayatama Taisha, one of the three grand shrines of Kumano.
Kumano beef is Japanese Black wagyu raised in the mountains of Kumano.
Only a small number of cattle come to market each year.
At Yakiniku Hige we buy whole Kumano beef carcasses and butcher them ourselves — ittō-gai, “buying the whole animal.”
So you can taste many different cuts from the same animal.
Please enjoy the beef we are proud of, with the sauces and drinks we are just as proud of.

THE
Kumano Beef

Kurashita (chuck roll)

What makes it special

Fat that melts, a clean finish

Kumano beef is fine-grained and tender, with an excellent flavor of its own. Its fat has a low melting point, so it melts the moment it touches your tongue. It never feels heavy, so you will enjoy it down to the last slice.

Cut only after you order

We make a point of cutting each order only after it is placed, and serving it before it warms through.

The sauce is the soul of yakiniku

Please try our five house-made sauces, each one made with great care.

Our original secret sauce with chopped green onion, in a small blue-striped dish
1

Our secret sauce, kept since we opened

Chicken bones are simmered slowly for hours, as if making ramen broth. A one-of-a-kind secret sauce you will not find anywhere else.

The second generation’s sauce, with condiments and sesame
2

The second generation’s sauce¥100 (¥110 incl. tax)

A newer sauce created by the second-generation owner: tangy and light. Switch between it and the secret sauce, and it feels like hopping between two yakiniku restaurants.

Condiments and dashi soy sauce in a divided white dish
3

Dashi soy sauce with condiments¥100 (¥110 incl. tax)

Dip plain-grilled beef in our special dashi soy sauce, then top it with your choice of five condiments. The most honest way to bring out the beef’s own flavor.

Sauce for yakitori and yaki-ton in a small dish
4

Sauce for yakitori and yaki-ton¥100 (¥110 incl. tax)

Created by our second-generation owner, who loves yakitori a little too much. A sauce made for chicken and pork — it feels like a visit to a yakitori bar, inside a yakiniku restaurant.

Uma-miso sauce in a small dish
5

Uma-miso sauce¥100 (¥110 incl. tax)

The red miso sauce of tori-yakiniku, a specialty of Mie Prefecture. The richness and toasty aroma of red miso go perfectly with the sweetness of chicken fat. We also serve “uma-miso-yaki”: chicken thigh, seseri (neck) and hine-momo (mature hen thigh) grilled in this sauce.

Aged salt karubi on a black plate, with spiced salt and garlic-chive soy sauce

An original Yakiniku Hige dish, enjoyed with spiced salt or garlic-chive soy sauce.
